You need more cards. When I'm on holiday I take my laptop with me and transfer everything to that at the end of each day. I believe there are also adapters that let you transfer files from your CF card to your iPod (obviously only makes sense for the 'big' iPods with 20Gb+ storage).

The Fuji F810 and F10 are good bets. I have a 5 year old Fuji MX-1700 and it's been a great little camera. I've just ordered a Konica Minolta Dynax 7D but I'm strongly considering the Fuji F10 for those occasions when I want something I can shove in my pocket rather than a bulky SLR.
